After a disappointing experience with some end of season white nectarines, bub and I wandered around the markets yesterday looking for some stone fruit inspiration. We found some small but gorgeous plums and wow, did they roast up a treat. I used a mixture of red- and purple-skinned yellow-fleshed plums for this recipe, but am keen to experiment with whatever kind of plums happy fortune sends my way next time we’re down at the markets.

honey roasted plums

6 small plums
1/3 cup light flavoured honey
1 heaped teaspoon unsalted butter
1 tbsp fresh lemon juice

Preheat the oven to 200 degrees. Halve and stone the plums. (You don’t need to peel them, as the skins will give a wonderful rosy hue to the cooking juices.)

In a microwave safe jug (or a small saucepan), gently heat the honey, butter and lemon juice till the butter is melted and everything is well combined.

Put the plums and half the honey mixture into a baking dish. Coat the plums well, and arrange them cut side down. Bake for 15 mins.

Take out the dish from the oven, turn the plums cut side up, and pour over the rest of the honey mixture. Bake for another 10-15 mins until tender and just slightly caramelising on the edges.

Eat warm as is, or enjoy a luxe version with mascarpone on the side.
