The idea of ‘creamy asian slaw‘, which I read about a while back on everybody likes sandwiches, may have sounded odd initially but when I thought about it, the idea of an asian-flavoured dressing for a raw cabbage salad started to sound better and better.
We didn’t have all the ingredients around at the time to give kickpleat’s proper version a go, but hopefully this simplified version still does some justice to the idea of this salad. The dressing does have ingredients that I wouldn’t ordinarily think to put together (ie mayonnaise and soy sauce!), but they work surprisingly well here. I’m so pleased to have found something to start filling up the gaping raw asian salad void in our kitchen repertoire.

Asian coleslaw
Adapted from everybody likes sandwiches
1 baby wombok (Chinese cabbage), finely shredded
2 carrots, grated or finely julienned
2 handfuls of snow peas, topped and tailed and finely sliced
For the dressing
2 tbsp each mayonnaise, cider vinegar and light soy sauce
1 tsp sugar
1 tsp grated fresh ginger
a few drops sesame oil
Combine all the dressing ingredients in a small bowl and stir to combine.
Toss salad ingredients with the dressing and serve.
Yield: serves 4 as a side

the idea of creamy and asian together is weird but good – sort of makes sense like mayonnaise in sushi with some soy

i totally agree johanna! who knows why some of these things work, but when they are this easy and tasty, perhaps it doesn’t much matter.
